As I mentioned <a href=\"http:\/\/stevegigl.com\/blog\/2021\/01\/08\/chaotic-cooky-kitchen-1\/\">last week<\/a>, I am aiming to cook one recipe from the iconic <a href=\"https:\/\/amzn.to\/3oPbsi1\" target=\"_blank\" rel=\"noreferrer noopener\">Cooky Book<\/a> every week.  For now, though, we&#8217;ll celebrate that I haven&#8217;t completely dropped this idea like a bad New Year&#8217;s resolution yet. In other words, the weekly cooky adventure continues!<\/p>\n\n\n\n<p>This week&#8217;s cookie is&#8230;  wait for it&#8230; <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/recipe2.jpg\" alt=\"Pineapple coconut cooky\/cookie\" class=\"wp-image-493\" width=\"302\" height=\"276\" srcset=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/recipe2.jpg 629w, http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/recipe2-300x274.jpg 300w\" sizes=\"auto, (max-width: 302px) 100vw, 302px\" \/><figcaption>Chosen because, well, I&#8217;m not certain I&#8217;ve ever had a pineapple cookie before<\/figcaption><\/figure><\/div>\n\n\n\n<p>These can be found on page 9, and I&#8217;m doing the 1st alternate on the base Pineapple Cookies recipe. The ingredients round-up:<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"601\" height=\"585\" src=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/ingr2.jpg\" alt=\"\" class=\"wp-image-490\" srcset=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/ingr2.jpg 601w, http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/ingr2-300x292.jpg 300w\" sizes=\"auto, (max-width: 601px) 100vw, 601px\" \/><figcaption>One guess which one of these isn&#8217;t going into the cookies.<sup>1<\/sup>  Hint: this was the 60s; the fresh pineapple survived.<\/figcaption><\/figure><\/div>\n\n\n\n<p>First off, we cream together the shortening (don&#8217;t complain; see above, Re: the 60s, and just be glad I didn&#8217;t break out the lard or bacon fat<sup>2<\/sup>) the sugar, and the egg.  <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/cream2.jpg\" alt=\"\" class=\"wp-image-486\" width=\"463\" height=\"377\" srcset=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/cream2.jpg 735w, http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/cream2-300x244.jpg 300w\" sizes=\"auto, (max-width: 463px) 100vw, 463px\" \/><\/figure><\/div>\n\n\n\n<p>And then, unlike me, <strong>you <\/strong>should add the pineapple and stir it in.  Instead, I missed that bit and moved right on to the flour.  (The good news is, I don&#8217;t think it mattered.) <\/p>\n\n\n\n<p>This time, though, I did remember to follow my rule and sift the flour.  Handily, you can add the other powdery stuff right into the sieve, stir it a bit, and sift it into the bowl.  (The modified recipe calls for you to omit the nutmeg if you add coconut, but that didn&#8217;t make sense to me, so I broke from the recipe and used the nutmeg.)<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"922\" height=\"615\" src=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/DSC_0059.jpg\" alt=\"\" class=\"wp-image-488\" srcset=\"http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/DSC_0059.jpg 922w, http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/DSC_0059-300x200.jpg 300w, http:\/\/stevegigl.com\/blog\/wp-content\/uploads\/2021\/01\/DSC_0059-768x512.jpg 768w\" sizes=\"auto, (max-width: 922px) 100vw, 922px\" \/><figcaption>Needs more pineapple<\/figcaption><\/figure><\/div>\n\n\n\n<p>Nutmeg or not, the good news is, once you mix everything together, realize it&#8217;s too dry, and realize you forgot the pineapple, it&#8217;s not too late to mix everything together.  Add the pineapple and the nuts, and pretend it all went according to plan.<\/p>\n\n\n\n<p>Now it&#8217;s time to chill the dough for an hour. Maybe another 10 or 20 and I&#8217;ll get it right.<\/figcaption><\/figure><\/div>\n\n\n\n<p>These are surprisingly subtle flavor-wise, but you definitely pick out all the hits. The pineapple and coconut could maybe be amped up, but I&#8217;m not certain it wouldn&#8217;t break the balance.  A very good cookie, er, cooky.<\/p>\n\n\n\n<p class=\"has-small-font-size\"><sup>1<\/sup>  Yeah, we keep our salt in a Cheez Whiz jar.  What&#8217;s it to ya?<\/p>\n\n\n\n<p class=\"has-small-font-size\">2 Aargh, now I wish I&#8217;d tried putting some bacon fat in there.
